Your choice will be shaped by many factors: goals, technical knowledge, budget, and even time.
Regardless of the path you take, there are technical and editorial standards to meet if you want a professional, high-performing website that serves visitors well and satisfies the ever-changing demands of search engine algorithms.
Asking "Who’s going to manage the site once it’s live?" and understanding the administrative load behind the scenes is already a big step in choosing the best direction: whether that's WordPress, a custom-coded solution, or another tool.
You also need to factor in your comfort level with tech. Thinking long-term is great, but it may make sense to start with WordPress (or another CMS) for your first few years in business, then graduate to something custom when you’re ready for advanced functionality.
